WHere is a simplified take on a cocktail found on a new cocktail list. This is a party-sized prepared mix that is packed full of essence of the festive period, making it perfect for hosting a holiday party. Any leftover syrup you can use for morning drinks, puddings, or to make additional servings of the drink.

Ingredients for the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g fine sugar
To make the Drink (makes 850ml, enough for 10)
400ml premium vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (see above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch
Instructions
To prepare the Citrus Syrup: Put all the items in a saucepan, bring to a light boil, mixing so the sugar melts. Then, take off the stove and leave to reach room temperature entirely. Decant into an sterilised bottle, close it keeping it chilled, where it will keep for up to one month.
To make Cocktail Base: Mix every liquids in a big jug, let it rest for one hour, then pass it through , ideally through a fine cloth, to ensure it's perfectly clear.
For serving: Measure 85ml from the premix into your stirring glass filled with ice, and stir lightly for a minute to cool it down. Filter to a frosted cocktail glass or a similar vessel, garnish with some cranberries adding the final touch by giving it a quick spritz of the essential oil over the top.
